    Prepare the Kettle Crisps

    Preheat your oven to 200°C (400°F). Thinly slice the Celtic potatoes into rounds. Toss them with olive oil, salt, and pepper. Spread them out on a baking sheet and bake for about 20-25 minutes until crispy and golden brown.

    Prepare the Corned Beef

    While the crisps are baking, chop the corned beef into small pieces. You can also warm it up in a skillet over medium heat for about 5-7 minutes until heated through.

    Melt the Cheese

    Once the kettle crisps are done, remove them from the oven. Sprinkle the chopped corned beef evenly over the crisps, then grate the cheddar cheese and generously sprinkle it on top. Return to the oven for another 5-7 minutes until the cheese is melted.

    Prepare the Toppings

    While the nachos are in the oven, finely chop the scallions. Prepare the Mary Rose sauce and sour cream in small bowls.

    Assemble and Serve

    Once the cheese has melted, remove the nachos from the oven. Top with chopped scallions, and serve immediately with Mary Rose sauce and sour cream on the side.
