    Sear the Lamb

    In a large pot, heat olive oil over medium-high heat. Add the cubed lamb and sear until browned on all sides, about 5-7 minutes. Remove lamb and set aside.

    Sauté Vegetables

    In the same pot, add the chopped onions and garlic, sautéing until onions are translucent, about 3-4 minutes.

    Combine Ingredients

    Return the lamb to the pot. Add the carrots, potatoes, thyme, broth, salt, and pepper. Bring to a boil.

    Simmer

    Reduce heat to low, cover, and let it simmer for about 1.5 to 2 hours, or until the lamb is tender and the vegetables are cooked through.

    Prepare Breadbowls

    While the stew is simmering, prepare the soda bread. You can either bake it from scratch or use store-bought bread. Hollow out the center to create bowls.

    Serve

    Once the stew is ready, ladle it into the hollowed bread bowls and serve warm with honey butter on the side.
