Directions

  1. 1

    Prepare the Ingredients

Gather all ingredients and prepare them as follows: slice the mushrooms, halve the tomatoes, and slice the pudding.

  2. 2

    Cook the Potatoes

Boil or steam the Celtic potatoes until tender. Once cooked, you can sauté them in a bit of butter for added flavor.

  3. 3

    Cook the Meats

In a large skillet over medium heat, cook the sausages and rashers until browned and cooked through. Add the black and white pudding slices to the skillet and cook for about 3-4 minutes on each side.

  4. 4

    Prepare the Mushrooms and Tomatoes

In the same skillet, add the sliced mushrooms and cook until golden brown. Remove them and set aside. In the same skillet, grill the halved tomatoes until slightly charred.

  5. 5

    Cook the Eggs

In a separate pan, fry the eggs to your desired doneness (sunny-side up, over-easy, etc.).

  6. 6

    Heat the Baked Beans

In a small saucepan, heat the baked beans until warmed through.

  7. 7

    Toast the Soda Bread

Lightly toast the soda bread slices and spread with honey butter.

  8. 8

    Assemble the Breakfast

On a large plate, arrange the cooked sausages, rashers, black & white pudding, sautéed mushrooms, grilled tomatoes, boiled or sautéed Celtic potatoes, fried eggs, and a side of baked beans. Serve with the toasted soda bread and honey butter.
