    Prepare the Celtic Potatoes

    Wash and peel the Celtic potatoes. Cut them into thin slices and soak in water for 15 minutes to remove excess starch. Drain and pat dry.

    Fry the Potatoes

    Heat olive oil in a deep frying pan over medium heat. Fry the potato slices until golden brown and crispy. Remove and drain on paper towels. Season with salt and pepper.

    Assemble the Nachos

    On a large platter, spread a layer of kettle potato chips. Top with fried Celtic potatoes, shredded corned beef, and shredded cheddar cheese.

    Melt the Cheese

    Place the assembled nachos under a broiler for about 3-5 minutes or until the cheese is melted and bubbly.

    Garnish

    Remove from the oven and garnish with dollops of sour cream, chopped green onions, and sliced jalapeños.
