    Prepare the Hash

    In a large skillet, heat olive oil over medium heat. Add diced onions, bell peppers, and garlic. Sauté for about 3-4 minutes until softened.

    Add Potatoes and Corned Beef

    Add the diced potatoes to the skillet. Season with salt and pepper. Cook for about 10-12 minutes, stirring occasionally, until potatoes are tender and lightly browned. Stir in the corned beef and mix well, cooking for another 5 minutes until heated through.

    Cook the Eggs

    While the hash is cooking, prepare the eggs to your liking (fried, poached, or scrambled).

    Toast the Soda Bread

    Toast the Irish soda bread slices until golden brown.

    Serve

    Divide the corned beef hash onto plates, top with eggs, and serve with toasted Irish soda bread on the side.
