Prepare the Filling
In a mixing bowl, combine bean sprouts, green onions, carrots, mushrooms, and cooked chicken or shrimp (if using). Mix in soy sauce, salt, and pepper.

Cook the Omelets
Heat 2 tablespoons of vegetable oil in a non-stick skillet over medium heat. Pour in a portion of the egg mixture (about 1/4 cup) and cook for 2-3 minutes on each side until golden brown. Repeat with remaining mixture, adding more oil as needed.

Prepare the Gravy
In a small saucepan, combine 1 cup of water, 1 tablespoon of soy sauce, and a pinch of salt. Bring to a simmer and thicken with cornstarch mixed with a little cold water if desired.

Serve the cooked omelets hot, drizzled with the gravy.
