Prepare the Filling
In a large bowl, combine ground pork, chopped cabbage, grated carrot, chopped green onion, minced garlic, minced ginger, soy sauce, sesame oil, salt, and pepper. Mix well until fully combined.

Fill the Wrappers
Take a gyoza wrapper and place about 1 tablespoon of the filling in the center. Moisten the edges of the wrapper with water, fold it in half, and pinch the edges to seal. Repeat with the remaining wrappers and filling.

Cook the Gyoza
Heat a non-stick skillet over medium heat and add a little oil. Place the gyoza in the skillet, flat side down. Cook for about 2-3 minutes until the bottoms are golden brown.

Steam the Gyoza
Add about 1/4 cup of water to the skillet and cover immediately. Allow the gyoza to steam for about 5-7 minutes or until the water has evaporated and the gyoza are cooked through.

Serve
Remove the gyoza from the skillet and serve hot with soy sauce or your favorite dipping sauce.
