Cook the Pancetta
In a large skillet, cook the chopped pancetta over medium heat until crispy. Remove and drain on paper towels, leaving the rendered fat in the skillet.

Blacken the Shrimp
Season the shrimp with blackening seasoning. In the same skillet with pancetta fat, add the shrimp and cook over medium-high heat for 2-3 minutes on each side, until opaque and cooked through. Remove from skillet and set aside.

Make the Sauce
In the same skillet, add butter, cherry tomatoes, capers, and lemon juice. Cook for 2-3 minutes until the tomatoes soften and the sauce is slightly thickened.

Combine and Serve
Add the blackened shrimp back to the skillet and toss to coat in the sauce. Serve the shrimp over the white cheddar grits, topped with the pancetta, fresh basil, and crumbled feta cheese. Season with salt and black pepper to taste.
