Fried Green Tomatoes

    Prepare the Tomatoes

    Slice the green tomatoes into 1/4 inch thick slices. Sprinkle with salt and let them sit for about 10 minutes to draw out moisture. Pat dry with a paper towel.

    Breading Process

    Set up a breading station: Place flour in one bowl, buttermilk in another, and mix the Parmesan cheese, Panko breadcrumbs, salt, and pepper in a third bowl. Dip each tomato slice in flour, then buttermilk, and finally coat with the breadcrumb mixture.

    Fry the Tomatoes

    Heat oil in a large skillet over medium-high heat. Fry the breaded tomato slices in batches until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Tomato Relish

    Make the Relish

    In a bowl, combine the diced ripe tomatoes, red onion, chopped basil, olive oil, balsamic vinegar, salt, and pepper. Mix well and let sit for about 10 minutes to allow the flavors to meld.

Assembly

    On a plate, arrange a bed of mixed greens. Top with fried green tomatoes, spoon over the tomato relish, and sprinkle with crumbled feta cheese. Drizzle with remoulade sauce before serving.
