    Prepare the Pork Belly

    Season the pork belly with salt and black pepper. In a skillet over medium heat, cook the pork belly until crispy and browned on all sides, about 15-20 minutes. Remove from heat and let it rest before slicing into small pieces.

    In a separate pot, boil the breakfast potatoes until fork-tender, about 10-15 minutes. Drain, then heat olive oil in a skillet over medium heat and sauté the potatoes until golden brown, about 5-7 minutes. Season with salt and black pepper.

    Sauté the Vegetables

    In the same skillet used for the potatoes, add diced bell peppers and onions. Sauté until they are soft and slightly caramelized, about 5-7 minutes.

    Prepare the Pineapple Salsa

    In a bowl, combine diced pineapple, chopped cilantro, and lime juice. Mix well and set aside.

    Assemble the Tortillas

    Warm the flour tortillas in a dry skillet or microwave. On each tortilla, layer the crispy pork belly, grilled corn, sautéed peppers and onions, and crumbled cotija cheese. Top with pineapple salsa and additional cilantro if desired.
