    Prepare the Grouper

    Pat the grouper fillets dry with a paper towel. Rub olive oil over each fillet, then generously coat with blackening seasoning on both sides.

    Cook the Grouper

    Heat a skillet over medium-high heat. Add the seasoned grouper fillets and cook for about 4-5 minutes on each side, or until the fish is cooked through and has a blackened crust. Remove from the skillet and set aside.

    Make the Creamy Spinach

    In the same skillet, add a little more olive oil if needed, then sauté minced garlic until fragrant. Add fresh spinach and cook until wilted. Stir in cream cheese and heavy cream, mixing until smooth. Season with salt and pepper to taste.

    Combine the Ingredients

    Add the roasted red peppers to the creamy spinach mixture and stir to combine. Return the blackened grouper to the skillet, spooning the creamy spinach and roasted peppers over the fish.

    Serve

    Cook for an additional 2-3 minutes until everything is heated through. Serve hot and enjoy your Grouper Florentine.
