Parmesan Crisp

Method

Prepare the Croutons

  1. 1

    Make Cornbread Croutons

Preheat your oven to 375°F (190°C). Toss the cubed cornbread with olive oil, salt, and pepper. Spread the cubes on a baking sheet and bake for about 15-20 minutes until golden and crispy.

Make the Dressing

  1. 2

    Prepare Caesar Dressing

In a medium bowl, whisk together mayonnaise, minced garlic, anchovy paste, lemon juice, Dijon mustard, Worcestershire sauce, and grated Parmesan cheese. Season with salt and pepper to taste. Set aside.

Grill Romaine

  1. 3

    Grill the Romaine

Preheat your grill to medium-high heat. Cut the romaine hearts in half lengthwise and brush the cut sides with olive oil. Grill the romaine for about 2-3 minutes on each side until slightly charred.

Assemble the Salad

  1. 4

    Combine Ingredients

On a serving platter, place the grilled romaine halves. Drizzle with housemade Caesar dressing, sprinkle with cornbread croutons, and top with Parmesan crisps. Serve immediately.
