    Prepare the Grits

    In a medium saucepan, bring 4 cups of water to a boil. Gradually whisk in the corn grits, reduce the heat to low, and cook for about 20-25 minutes, stirring frequently until the grits are thick and creamy.

    Add Cheese and Seasoning

    Once the grits are cooked, stir in the butter, white cheddar cheese, Cajun seasoning, salt, and black pepper. Mix well until the cheese is melted and creamy. Keep warm.

    Prepare the Catfish

    Season the catfish fillets with salt, pepper, and additional Cajun seasoning. Heat olive oil in a skillet over medium-high heat.

    Cook the Catfish

    Add the catfish fillets to the skillet and cook for about 4-5 minutes on each side, or until golden brown and cooked through.

    Make the Creole Cream

    In the same skillet, add heavy cream and green onions, stirring to combine. Simmer for 2-3 minutes until slightly thickened.

    To serve, place a generous scoop of grits on a plate, top with catfish, and drizzle with the white cheddar Creole cream.
