Omelet Preparation

    Cook the Filling

    In a skillet over medium heat, sauté the onions and bell pepper until softened. Add the diced Conecuh sausage and shrimp, cooking until the shrimp are pink. Season with salt and pepper, then set aside.

    Prepare the Eggs

    In a bowl, whisk together the eggs, salt, and pepper. Heat a non-stick skillet over medium heat and pour in the egg mixture, cooking until the edges are set.

    Assemble the Omelet

    Add the shrimp and sausage mixture to one half of the omelet, sprinkle with cheddar cheese, and fold the other half over. Cook until the cheese is melted.

Hollandaise Sauce Preparation

    Make the Hollandaise Sauce

    In a double boiler, whisk egg yolks and lemon juice until thickened. Gradually whisk in melted butter until the sauce is smooth. Season with salt.

Breakfast Potatoes Preparation

    Toss the diced potatoes with olive oil, paprika, garlic powder, salt, and pepper. Spread on a baking sheet and roast in a preheated oven at 425°F (220°C) for about 25 minutes or until golden brown.
