Main Ingredients

Method

Preparation

  1. 1

    Brining the Chicken

In a large bowl, combine Dr. Pepper, brown sugar, salt, black pepper, smoked paprika, garlic powder, onion powder, and chili powder. Stir until sugar and salt are dissolved. Submerge the chicken halves in the brine, cover, and refrigerate for 24 hours.

  2. 2

    Smoking the Chicken

Preheat your smoker to 225°F (107°C). Remove the chicken from the brine and pat dry. Place the chicken halves in the smoker breast side up. Smoke for about 3-4 hours or until the internal temperature reaches 165°F (74°C).

  3. 3

    Making the Sides

While the chicken is smoking, preheat the oven to 400°F (200°C). Toss baby potatoes with olive oil, fresh herbs, salt, and pepper. Roast in the oven for 25-30 minutes until tender. In a separate pot, boil green beans in salted water for 5-7 minutes until bright green and tender. Drain and toss with butter.

  4. 4

    Glazing the Chicken

In the last 30 minutes of smoking, brush the chicken with homemade spicy Dr. Pepper BBQ sauce. Continue to smoke until the chicken is fully cooked.

  5. 5

    Serving

Serve the smoked chicken halves with herb roasted baby potatoes and green beans on the side.
