Prepare the Rub
In a bowl, mix together paprika, brown sugar, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Rub this mixture all over the pork shoulder. Let it marinate for at least 1 hour, preferably overnight in the refrigerator.

Prepare the Smoker
Preheat your smoker to 225°F (107°C) using your choice of wood chips for smoking. Hickory or applewood works well with pork.

Rest the Meat
Once the pork is done, remove it from the smoker and let it rest for at least 30 minutes before shredding.

Shred and Serve
Using two forks, shred the pork into bite-sized pieces. Mix in apple cider vinegar and water to moisten the meat. Serve with BBQ sauce if desired.
