Shrimp, smoked andouille sausage, tomatoes, and peppers, over creamy stone ground grits in our signature sauce topped with white cheddar (can be made without pork).

Preparing the Grits

    Cook the Grits

    In a large saucepan, bring the water to a boil. Slowly whisk in the stone ground grits. Reduce heat to low and simmer, stirring occasionally, for about 20-25 minutes until thickened. Stir in the milk, butter, and half of the white cheddar cheese until creamy. Set aside.

Cooking the Shrimp and Sausage

    Sauté the Sausage

    In a large skillet, heat the olive oil over medium heat. Add the sliced andouille sausage and cook until browned, about 5 minutes.

    Add Vegetables

    Stir in the diced tomatoes, bell pepper, and minced garlic. Cook for another 3-4 minutes until the vegetables are tender.

    Cook the Shrimp

    Add the shrimp to the skillet, season with salt, black pepper, cayenne pepper, and lemon juice. Cook until the shrimp are pink and opaque, about 3-5 minutes.

Assemble the Dish

    Serve

    Spoon the creamy grits onto plates, top with the shrimp and sausage mixture. Sprinkle with remaining white cheddar cheese and garnish with chopped green onions before serving.
