Prepare the Coating
In a large bowl, combine the flour, cornstarch, baking powder, salt, black pepper, garlic powder, and paprika. Mix well.

Dredge the Chicken
Dip each plant-based chicken patty into the buttermilk, allowing excess to drip off, then coat in the flour mixture. Press lightly to adhere. Set aside.

Fry the Chicken
In a large skillet, heat oil over medium-high heat. Once hot, carefully add the coated chicken patties. Fry for about 4-5 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.

Make the Nashville Hot Sauce
In a bowl, mix the hot sauce and brown sugar until well combined. Taste and adjust for sweetness.

Assemble the Sandwich
Spread the Nashville hot sauce generously on one side of each brioche bun. Layer with a fried chicken patty, lettuce leaves, and pickles. Top with the other half of the bun.
