Prepare the crust
In a medium bowl, combine the graham cracker crumbs and melted butter. Stir until the crumbs are well coated and the mixture resembles wet sand.

Form the crust
Divide the graham cracker mixture evenly among the mason jars, pressing it down firmly to form a crust layer at the bottom.

Make the filling
In a mixing bowl, whisk together the sweetened condensed milk, fresh lime juice, lime zest, and egg yolks until smooth and well combined.

Fill the jars
Pour the lime filling over the graham cracker crust in each mason jar, filling them about 3/4 full.

Chill
Refrigerate the filled mason jars for at least 2 hours, or until the filling is set.

Prepare the whipped cream
In a mixing bowl, beat the heavy whipping cream and powdered sugar together until stiff peaks form.

Top the pies
Once the pies are chilled and set, remove them from the refrigerator and top each jar with a generous dollop of whipped cream.

Garnish each mason jar with a lime slice and a sprinkle of additional graham cracker crumbs.
