Peel the Russet potatoes and grate them using a box grater or a food processor. Place the grated potatoes in a bowl of cold water to remove excess starch.

After soaking for about 10 minutes, drain the potatoes and place them on a clean kitchen towel. Pat them dry to remove as much moisture as possible.

Finely chop the onion and set aside.

In a large bowl, combine the grated potatoes, chopped onion, salt, and black pepper. Mix well.

In a large skillet, heat the vegetable oil over medium-high heat until hot.

Scoop about 1/2 cup of the potato mixture into the hot oil and flatten it with a spatula. Repeat with the remaining mixture, ensuring not to overcrowd the pan. Cook for about 4-5 minutes on each side until golden brown and crispy.
