    Prepare Ingredients

    Slice the English muffins in half. Slice the green tomatoes into thick rounds. Mash the avocado with a pinch of salt and pepper.

    Cook Hash Browns

    In a skillet, heat 1 tablespoon of olive oil or butter over medium heat. Add hash browns, season with salt and pepper, and cook until golden brown and crispy. Set aside.

    Fry Green Tomatoes

    In the same skillet, add another tablespoon of olive oil or butter. Fry the green tomato slices until they are golden and tender, about 3-4 minutes per side. Set aside.

    In a saucepan, bring water to a gentle simmer. Crack eggs individually into small bowls and gently slide them into the water. Poach for about 3-4 minutes until whites are set but yolks are still runny. Remove with a slotted spoon and let drain.
