    Prepare the Crab Cakes

    In a mixing bowl, combine crab meat, breadcrumbs, mayonnaise, Dijon mustard, Old Bay seasoning, egg, salt, and black pepper. Mix until combined but do not overmix.

    Form and Cook the Crab Cakes

    Form the mixture into patties (about 4-6 depending on size). Heat vegetable oil in a skillet over medium heat. Cook the patties for 4-5 minutes on each side or until golden brown. Remove and keep warm.

    Prepare the Hash

    In a separate pan, sauté diced potatoes and bell pepper over medium heat until tender and slightly crispy, about 10-12 minutes. Season with salt and pepper.

    Sauté the Spinach

    In another skillet, sauté fresh spinach until wilted, about 2-3 minutes. Set aside.

    Prepare the Salsa

    In a small bowl, mix pickled corn, diced tomatoes, chopped cilantro, and lime juice to create the salsa.

    Assemble the Dish

    On a plate, layer the Old Bay potato & pepper hash, top with sautéed spinach, and place the crab cakes on top. Finish with a generous spoonful of pickled corn & tomato salsa.
