Cajun Salmon Cakes

Cajun Hollandaise

Method

Cajun Salmon Cakes

  1. 1

    Prepare the Salmon Cakes

In a large bowl, combine flaked salmon, bread crumbs, green onions, Cajun seasoning, beaten egg, mayonnaise, salt, and pepper. Mix well until combined.

  2. 2

    Form and Cook the Cakes

Form the mixture into patties. Heat olive oil in a skillet over medium heat. Cook the patties for 4-5 minutes on each side, or until golden brown.

Garlicky Spinach

  1. 3

    Sauté the Spinach

In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add fresh spinach and cook until wilted. Season with salt and pepper.

Cajun Hollandaise

  1. 4

    Make the Hollandaise

In a bowl, whisk egg yolks and lemon juice. Gradually add melted butter while whisking constantly until the sauce thickens. Stir in Cajun seasoning and salt to taste.

Hash Browns

  1. 5

    Cook the Hash Browns

In a skillet, heat olive oil over medium heat. Add shredded potatoes, season with salt and pepper, and cook until golden brown and crispy, about 5-7 minutes per side.

Assembly

  1. 6

    Assemble the Dish

On each toasted English muffin half, place a salmon cake, top with a poached egg, and drizzle with Cajun hollandaise. Serve with garlicky spinach, hash browns, and fresh fruit on the side.
