Method
Preparing the Veal

Assemble the Veal Saltimbocca
Place a slice of prosciutto on each veal cutlet, and top it with 2 sage leaves. Secure with a toothpick.

Cook the Veal
In a large skillet, heat olive oil over medium-high heat. Add the veal cutlets and cook for 3-4 minutes on each side until golden brown. Remove from skillet and set aside.

Make the Sauce
Deglaze the pan with white wine, scraping up any brown bits. Allow to simmer for 3-4 minutes until reduced slightly. Return the veal to the pan and simmer for another 2 minutes.
Making Crispy Polenta

Cook the Polenta
In a saucepan, bring water and salt to a boil. Gradually whisk in the polenta, stirring constantly. Cook for 15-20 minutes until thickened.

Add Butter and Cheese
Stir in butter and Parmesan cheese until melted and combined. Spread the polenta onto a baking sheet and let it cool.
