Main Ingredients

Crispy Polenta

Method

Preparing the Veal

  1. 1

    Assemble the Veal Saltimbocca

Place a slice of prosciutto on each veal cutlet, and top it with 2 sage leaves. Secure with a toothpick.

  2. 2

    Cook the Veal

In a large skillet, heat olive oil over medium-high heat. Add the veal cutlets and cook for 3-4 minutes on each side until golden brown. Remove from skillet and set aside.

  3. 3

    Make the Sauce

Deglaze the pan with white wine, scraping up any brown bits. Allow to simmer for 3-4 minutes until reduced slightly. Return the veal to the pan and simmer for another 2 minutes.

Making Crispy Polenta

  1. 4

    Cook the Polenta

In a saucepan, bring water and salt to a boil. Gradually whisk in the polenta, stirring constantly. Cook for 15-20 minutes until thickened.

  2. 5

    Add Butter and Cheese

Stir in butter and Parmesan cheese until melted and combined. Spread the polenta onto a baking sheet and let it cool.

  3. 6

    Crisp the Polenta

Once cooled, cut the polenta into squares. In a skillet, heat olive oil and fry the polenta squares until golden and crispy on both sides.

Preparing Seasonal Vegetables

  1. 7

    Sauté the Vegetables

In a separate skillet, heat olive oil over medium heat. Add the mixed seasonal vegetables and sauté for about 5-7 minutes until tender. Season with salt and pepper.
