Method

Panna Cotta Preparation

Prepare Gelatin

In a small bowl, sprinkle gelatin over 3 tablespoons of cold water and let it sit for 5 minutes until it blooms.

Heat Cream

In a saucepan, combine heavy cream, sugar, lime zest, and vanilla extract. Heat over medium heat until sugar is dissolved and mixture is warm, but not boiling.

Combine Mixtures

Remove from heat and stir in the bloomed gelatin until fully dissolved. Pour into serving glasses and refrigerate for at least 4 hours until set.

Grapefruit Compote Preparation

Cook Compote

In a saucepan, combine grapefruit segments, sugar, mixed spice, and water. Bring to a simmer and cook for about 10 minutes until slightly thickened.

Cool Compote

Remove from heat and let it cool. Once cooled, spoon over the set panna cotta.

Cinnamon Tuile Preparation

Preheat Oven

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix Tuile Ingredients

In a bowl, whisk together flour, powdered sugar, and cinnamon. Add melted butter and egg whites, mixing until smooth.

Bake Tuiles

Drop small amounts of batter onto the prepared baking sheet and spread thinly. Bake for 8-10 minutes until edges are golden. Allow to cool and harden.
