Method

Brioche Preparation

  1. 1

    Make the Brioche Dough

In a large bowl, combine warm milk, sugar, and yeast. Let sit for 5 minutes until frothy. Add eggs, melted butter, and salt, and mix well. Gradually add flour until a dough forms. Knead for about 10 minutes until smooth. Place in a greased bowl, cover, and let rise for 1 hour.

  2. 2

    Shape and Bake

Punch down the dough and shape it into a loaf. Place in a greased loaf pan, cover, and let rise for another 30 minutes. Preheat oven to 375°F (190°C) and bake for 25-30 minutes until golden brown. Let cool.

Hazelnut Praline Preparation

  1. 3

    Make the Hazelnut Praline

In a saucepan, combine sugar and water. Cook over medium heat until the sugar dissolves and turns golden. Add hazelnuts and stir to coat. Pour onto a parchment-lined baking sheet to cool. Once hardened, break into pieces.

Whipped Mascarpone Preparation

  1. 4

    Prepare the Whipped Mascarpone

In a bowl, beat together mascarpone, heavy cream, powdered sugar, and vanilla until soft peaks form. Set aside.

French Toast Assembly

  1. 5

    Assemble the French Toast

Slice the brioche loaf and spread Nutella between two slices to form a sandwich. Dip each sandwich in beaten eggs and cook on a buttered skillet until golden brown on both sides.

  2. 6

    Serve

Serve warm topped with whipped mascarpone, hazelnut praline, fresh berries, and a drizzle of maple syrup.
