Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into uniform sticks, about 1/4 inch thick.

Soak the Potatoes
Place the cut potato sticks in a bowl of cold water and soak for at least 30 minutes. This helps remove excess starch and makes the fries crispier.

Dry the Potatoes
Drain the potatoes and pat them dry with a clean kitchen towel to remove moisture.

Heat the Oil
In a deep pot or fryer, heat vegetable oil to 350°F (175°C). Use a thermometer to ensure accurate temperature.

Fry the Potatoes
Carefully add a batch of dried potato sticks to the hot oil. Fry for about 5-7 minutes or until golden brown and crispy. Do not overcrowd the pot.

Drain and Season
Remove the fries with a slotted spoon and place them on a plate lined with paper towels to drain excess oil. Sprinkle with salt and black pepper while hot.
