Prepare the Rice

Rinse the rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then reduce heat to low and cover. Simmer for about 15 minutes until rice is tender and water is absorbed.

Combine Ingredients

In a large saucepan, combine the cooked rice, milk, sugar, vanilla extract, and salt. Stir well and bring the mixture to a simmer over medium heat.

Thicken the Pudding

In a small bowl, mix the cornstarch with a few tablespoons of cold milk to create a slurry. Once the pudding is simmering, gradually add the cornstarch mixture, stirring constantly. Cook for an additional 5-10 minutes until the pudding thickens to your desired consistency.

Cool and Serve

Remove the pudding from heat and let it cool slightly. Pour the rice pudding into individual serving bowls or one large dish. Refrigerate for at least 2 hours to chill. Before serving, sprinkle with cinnamon and chopped nuts if desired.
