Prepare the Walnuts
Toast the walnuts in a dry skillet over medium heat for about 5 minutes until they are fragrant and lightly browned. Allow them to cool.

Chop the Vegetables
Finely chop the tomatoes, green bell pepper, and red onion. Place them in a mixing bowl.

Add Herbs
Chop the parsley and mint leaves, then add them to the bowl with the chopped vegetables.

Blend the Ingredients
In a food processor, combine the cooled walnuts, red pepper flakes, olive oil, lemon juice, and a pinch of salt. Blend until smooth.

Combine and Mix
Add the blended walnut mixture to the bowl with the chopped vegetables and herbs. Mix well to combine all the ingredients.

Adjust Seasoning
Taste the ezme and adjust the seasoning with more salt or lemon juice as needed.

Serve
Transfer the ezme to a serving bowl and drizzle with a bit more olive oil. Serve with pita bread or fresh vegetables.
