Method
Prepare the Mignonette
Mix the Mignonette
In a small bowl, combine red wine vinegar, shallots, and black pepper. Mix well and set aside to let the flavors meld.
Prepare the Cocktail Sauce
Combine Ingredients
In a separate bowl, mix together ketchup, horseradish, hot sauce, and lemon juice until well combined. Adjust seasoning to taste.
Prepare the Seafood
Cook Lobster Tail
Boil the lobster tail in salted water for about 8-10 minutes until cooked. Remove from water, cool, and slice in half lengthwise.
Prepare Ahi Tuna
Season the ahi tuna with blackening spices and sear on a hot grill for 1-2 minutes on each side. Slice thinly for sashimi.
Plate the Seafood Tower
On a large platter or tiered serving dish, arrange the oysters, lobster tail, chilled prawns, blackened ahi tuna, and salmon tartare artistically.

Serve the seafood tower with lemon wedges, black pepper mignonette, and fire-roasted cocktail sauce on the side.
