Crust Preparation

Make the Chocolate Crust
In a mixing bowl, combine the gluten-free chocolate cookie crumbs, melted butter, and granulated sugar. Mix until well combined.

Form the Crust
Press the mixture firmly into the bottom and sides of a 9-inch pie pan. Bake in a preheated oven at 350°F (175°C) for 10 minutes. Let cool.
Filling Preparation

Melt the Chocolate
In a saucepan over medium heat, combine the dark chocolate chips, milk chocolate chips, and white chocolate chips with the heavy cream. Stir until completely melted and smooth.

Add Vanilla
Remove the saucepan from heat and stir in the vanilla extract. Allow the mixture to cool slightly.

Fill the Crust
Pour the chocolate filling into the cooled chocolate crust. Smooth the top with a spatula.

Chill the Pie
Refrigerate the pie for at least 4 hours or until set.

Once set, drizzle the caramel sauce over the pie and sprinkle sea salt on top before serving.
