Marinate the Steak

Combine Marinade Ingredients
In a bowl, whisk together olive oil, soy sauce, balsamic vinegar, minced garlic, chopped rosemary, black pepper, and salt. Add the bistro steak, ensuring it is well-coated. Cover and marinate in the refrigerator for at least 1 hour or overnight for best flavor.

Remove Steak from Marinade
Take the steak out of the marinade and let it sit at room temperature for about 30 minutes before cooking.
Prepare the Fries

Cut and Soak Potatoes
Cut the Russet potatoes into fries. Soak them in cold water for 30 minutes to remove excess starch.

Make the Whiskey Peppercorn Sauce

Add Whiskey
Carefully add whiskey to the pan, scraping up any bits from the bottom. Allow it to simmer until reduced by half.

Finish the Sauce
Stir in heavy cream and crushed black peppercorns. Cook until the sauce thickens slightly, about 5-7 minutes. Season with salt to taste.
