Method

Marinate the Steak

    Combine Marinade Ingredients

    In a bowl, whisk together olive oil, soy sauce, balsamic vinegar, minced garlic, chopped rosemary, black pepper, and salt. Add the bistro steak, ensuring it is well-coated. Cover and marinate in the refrigerator for at least 1 hour or overnight for best flavor.

    Remove Steak from Marinade

    Take the steak out of the marinade and let it sit at room temperature for about 30 minutes before cooking.

Prepare the Fries

    Cut and Soak Potatoes

    Cut the Russet potatoes into fries. Soak them in cold water for 30 minutes to remove excess starch.

    Fry the Potatoes

    Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Drain and pat the potatoes dry, then fry them in batches until golden brown, about 5-7 minutes. Remove and drain on paper towels, seasoning with salt.

Make the Whiskey Peppercorn Sauce

    Sauté Shallots

    In a saucepan, melt butter over medium heat. Add minced shallots and cook until soft, about 3-4 minutes.

    Add Whiskey

    Carefully add whiskey to the pan, scraping up any bits from the bottom. Allow it to simmer until reduced by half.

    Finish the Sauce

    Stir in heavy cream and crushed black peppercorns. Cook until the sauce thickens slightly, about 5-7 minutes. Season with salt to taste.

Cook the Steak

    Grill or Pan-sear the Steak

    Preheat your grill or skillet over medium-high heat. Cook the marinated steak for 4-5 minutes on each side for medium-rare, or until desired doneness. Let the steak rest for 5 minutes before slicing.
