    Prepare the Ingredients

    Rinse and drain the chickpeas. Trim the ends of the roma beans and chop the fennel bulb into thin slices. Zest and juice the lemon.

    Season the Halibut

    Pat the halibut fillets dry with paper towels and season both sides with salt and black pepper.

Cooking

    Sear the Halibut

    In a large skillet, heat olive oil over medium-high heat. Once hot, add the halibut fillets and sear for about 4-5 minutes per side, or until golden brown and cooked through. Remove from the skillet and let rest.

    Cook the Vegetables

    In the same skillet, add the fennel slices and cook until softened, about 3 minutes. Then add the chickpeas and roma beans, along with the lemon juice and zest. Cook for an additional 2-3 minutes until heated through.

    Serve

    Plate the fennel, chickpeas, and roma beans, and top with the seared halibut. Garnish with fresh dill and serve immediately.
