Method

Preparation of Coffee Mixture

  1. 1

    Prepare the Espresso

Brew 200 ml of espresso coffee and let it cool completely. If using, mix in the coffee liqueur for added flavor.

Making the Mascarpone Mixture

  1. 2

    Separate the Eggs

Separate the egg yolks and egg whites into two different bowls. You'll use the yolks for the cream and the whites for the meringue.

  2. 3

    Whisk the Egg Yolks

In the bowl with egg yolks, add 100 grams of granulated sugar and whisk until the mixture is pale and creamy.

  3. 4

    Incorporate Mascarpone

Gently fold in the mascarpone cheese into the egg yolk mixture until smooth and well combined.

  4. 5

    Whip the Egg Whites

In a clean bowl, whip the egg whites until stiff peaks form. Gradually add 50 grams of sugar and continue whipping until glossy.

  5. 6

    Combine Mixtures

Carefully fold the whipped egg whites into the mascarpone mixture in three batches. Be gentle to retain the airiness.

  6. 7

    Whip the Cream

In another bowl, whip the heavy cream until soft peaks form. Fold it into the mascarpone mixture until combined.

Assembling the Tiramisu

  1. 8

    Dip Ladyfingers

Quickly dip each ladyfinger into the cooled espresso mixture, ensuring they are soaked but not soggy.

  2. 9

    Layer the Ingredients

In a rectangular dish, place a layer of dipped ladyfingers, followed by a layer of mascarpone mixture. Repeat the layers, finishing with the mascarpone on top.

  3. 10

    Chill

Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight for best flavor.

  4. 11

    Garnish

Before serving, dust the top with cocoa powder and sprinkle dark chocolate shavings for decoration.
