Method

Marinating Duck

Prepare the Marinade

In a bowl, mix together the olive oil, minced garlic, chopped rosemary, salt, and black pepper.

Marinate the Duck

Score the skin of the duck breasts in a crosshatch pattern. Rub the marinade all over the duck breasts and let them marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator.

Cooking Duck

Grill the Duck

Preheat your grill to medium-high heat. Place the marinated duck breasts skin-side down on the grill and cook for 6-8 minutes until the skin is crispy. Flip the duck breasts and cook for another 4-6 minutes for medium-rare. Remove from the grill and let rest for 5 minutes before slicing.

Making Tomato Garlic Polenta

Prepare the Polenta

In a large saucepan, bring the water to a boil. Slowly whisk in the polenta and reduce the heat to low. Cook, stirring frequently, for about 30 minutes until the polenta is thick and creamy.

Add Tomatoes and Garlic

In a separate pan, sauté the minced garlic in butter over medium heat until fragrant. Add the diced tomatoes, salt, and black pepper. Cook for about 5 minutes until the tomatoes soften.

Combine Polenta and Tomato Mixture

Stir the tomato and garlic mixture into the cooked polenta. Add the grated Parmesan cheese and mix until fully incorporated. Adjust seasoning with salt and pepper to taste.

Serving

Plate the Dish

Spoon the tomato garlic polenta onto plates and top with sliced grilled duck. Serve immediately.
