Pasta Preparation

Cook the Spaghetti
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes.

Cook the Pancetta
While the spaghetti is cooking, heat a large skillet over medium heat. Add the pancetta and cook until it is crispy and golden brown, about 5-7 minutes. Remove from heat and set aside.

Prepare the Sauce Mixture
In a medium bowl, whisk together the eggs, grated Parmesan cheese, and a generous amount of black pepper until well combined. Set aside.

Combine Spaghetti and Sauce
Once the spaghetti is cooked, reserve a cup of pasta water and then drain the spaghetti. Immediately add the hot spaghetti to the skillet with the pancetta.

Add the Egg Mixture
Remove the skillet from the heat and quickly pour in the egg and cheese mixture, tossing the spaghetti continuously. The heat from the pasta will cook the eggs and create a creamy sauce. If the mixture is too thick, add reserved pasta water a little at a time until you reach the desired consistency.

Season and Serve
Taste the pasta and season with salt and more black pepper as needed. Serve immediately, garnished with additional Parmesan cheese if desired.
