Calamari Preparation

Clean the Calamari
Start by cleaning the fresh calamari. Remove the head and tentacles from the body and clean out the insides. Rinse under cold water and cut the body into rings.

Prepare the Breading
In a bowl, combine the all-purpose flour, cornstarch, salt, and black pepper. Mix well.

Prepare the Buttermilk Mixture
In another bowl, whisk together the egg and buttermilk until combined.

Heat the Oil
In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Bread the Calamari
Dip each calamari ring first into the buttermilk mixture, then dredge in the flour mixture, ensuring they are well coated.

Fry the Calamari
Carefully place the breaded calamari into the hot oil in batches, frying until golden brown, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels.

Add Tomatoes and Spices
Add the canned crushed tomatoes, dried oregano, and dried basil to the saucepan. Stir to combine.

Simmer the Sauce
Allow the sauce to simmer for 15-20 minutes, stirring occasionally. Season with salt and black pepper to taste.
