Method

Preparation of Fritters

1

Prepare the mixture

In a large bowl, combine the smoked chickpeas, Carolina Gold rice, quinoa, all-purpose flour, green onions, garlic powder, cumin, salt, and black pepper. Mix until well combined.

2

Form the fritters

Take a portion of the mixture and form it into small patties or fritters.

3

Fry the fritters

In a large skillet, heat vegetable oil over medium-high heat. Fry the fritters until golden brown on both sides, about 3-4 minutes per side. Drain on paper towels.

Preparation of Pilaf

4

Cook the rice and quinoa

In a saucepan, heat olive oil over medium heat. Add diced onion and sauté until translucent. Add Carolina Gold rice and quinoa, stir for a minute. Pour in vegetable broth and salt, bring to a boil. Reduce heat, cover, and simmer until grains are cooked, about 15-20 minutes.

Preparation of Salad

5

Mix the salad

In a bowl, combine diced heirloom tomatoes, cucumber, and fresh basil. Drizzle with olive oil and balsamic vinegar. Season with salt and pepper to taste. Toss well to combine.

Preparation of Alabama White BBQ Sauce

6

Make the sauce

In a bowl, whisk together mayonnaise, apple cider vinegar, horseradish, garlic powder, salt, and pepper until smooth. Adjust seasoning to taste.
