Method
Preparation of Fritters
Prepare the mixture
In a large bowl, combine the smoked chickpeas, Carolina Gold rice, quinoa, all-purpose flour, green onions, garlic powder, cumin, salt, and black pepper. Mix until well combined.
Form the fritters
Take a portion of the mixture and form it into small patties or fritters.
Fry the fritters
In a large skillet, heat vegetable oil over medium-high heat. Fry the fritters until golden brown on both sides, about 3-4 minutes per side. Drain on paper towels.

Cook the rice and quinoa
In a saucepan, heat olive oil over medium heat. Add diced onion and sauté until translucent. Add Carolina Gold rice and quinoa, stir for a minute. Pour in vegetable broth and salt, bring to a boil. Reduce heat, cover, and simmer until grains are cooked, about 15-20 minutes.
