Preparing the Rabbit

Braised Rabbit

In a large heavy-bottomed pot, heat a bit of oil over medium heat. Season the rabbit pieces with salt and pepper. Brown the rabbit on all sides for about 10 minutes. Remove and set aside.

Sauté the Vegetables

In the same pot, add the smoked mushrooms, corn, baby carrots, and oven dried tomatoes. Sauté for 5-7 minutes until softened.

Combine and Braise

Return the rabbit to the pot, add the natural jus, and bring to a simmer. Cover and braise for about 1.5 hours or until the rabbit is tender.

Add Peas

In the last 10 minutes of cooking, add the English peas to the pot.

Making the Gnocchi

Prepare the Potatoes

Boil the cubed potatoes in salted water until tender, about 15-20 minutes. Drain and mash until smooth.

Mix the Dough

In a mixing bowl, combine the mashed potatoes, flour, egg, and salt. Mix until a dough forms. If the dough is too sticky, add a bit more flour.

Shape the Gnocchi

On a floured surface, roll out portions of the dough into long ropes about ½ inch thick. Cut into 1-inch pieces and press with a fork to create ridges.

Cook the Gnocchi

Bring a pot of salted water to a boil. Cook the gnocchi in batches until they float to the surface, about 2-3 minutes. Remove and set aside.

Finishing Touches

Combine Gnocchi and Rabbit

In a large pan, combine the braised rabbit mixture with the cooked gnocchi. Drizzle with truffle oil and toss gently to combine.

Plate the gnocchi with the rabbit mixture, sprinkle with shaved Romano cheese, and serve hot.
