Method
Preparing the Lemon Posset
Heat the Cream
In a saucepan, combine the heavy cream and sugar. Heat over medium heat, stirring until the sugar dissolves and the mixture is just about to boil.
Add Lemon
Remove from heat. Stir in the lemon zest and lemon juice. Let it cool for about 15 minutes.
Chill
Pour the mixture into serving cups or ramekins. Cover and refrigerate for at least 4 hours, or until set.

Making the Almond Shortbread
Shape and Bake
Preheat the oven to 350°F (175°C). Roll out the dough to about 1/4 inch thick, cut into desired shapes, and place on a baking sheet. Bake for 12-15 minutes or until golden.
Melting the White Chocolate
Melt Chocolate
In a microwave-safe bowl, melt the chopped white chocolate in 30-second intervals, stirring in between until smooth.
Serving
Assemble the Dish
Serve the lemon posset chilled, topped with the macerated berries, a drizzle of melted white chocolate, and a side of almond shortbread.
