    Prepare the Bone Marrow

    Preheat your oven to 450°F (230°C). Place the bone marrow bones upright in a roasting pan. Season with sea salt and freshly cracked black pepper.

    Roast the Bones

    Roast the bones in the preheated oven for about 15-20 minutes, until the marrow is soft and begins to separate from the bone.

    Caramelize the Sugar

    Remove the bones from the oven and sprinkle sugar on top of each piece. Return to the oven for an additional 5 minutes until the sugar has caramelized.

    Prepare the Crostini

    While the marrow is roasting, slice the baguette into 1/2 inch thick slices. Heat butter in a skillet over medium heat and toast the baguette slices until golden brown on both sides.

    Assemble the Dish

    Once the bone marrow is ready, remove it from the oven and let it cool slightly. Serve the roasted bone marrow topped with beef tartare, crispy potatoes, and chopped parsley on a plate.

    Garnish and Serve

    Place the buttered crostini on the side and serve with lemon wedges for squeezing over the dish.
