Cook the Tomato Sauce
Pour in the tomato sauce, season with salt and pepper, and let it simmer for about 15 minutes until it thickens.

Prepare the Chorizo Patty
In a bowl, combine the chorizo sausage (remove casing if necessary) and shape into patties.

Cook the Chorizo Patties
In a skillet over medium heat, cook the chorizo patties for about 5 minutes on each side or until browned and cooked through.

Assemble the Melt
Slice the baguette in half and place the cooked chorizo patty on one half. Layer the three cheeses (Valdeon, Mahon, Idiazabal) on top of the patty.

Melt the Cheese
Place the open baguette under a broiler for a few minutes until the cheese is melted and bubbly.

Serve
Remove from the oven, place the other half of the baguette on top, and serve with the tomato gravy on the side.
