Preparation

Cook the Pasta
Bring a large pot of salted water to a boil. Add the penne pasta and cook until al dente, according to package instructions. Drain and set aside.

Prepare the Chicken
Grill the chicken breasts until fully cooked, about 6-7 minutes per side. Once done, slice the chicken into strips and set aside.

Cook the Bacon
In a large skillet over medium heat, cook the bacon until crispy. Remove the bacon, crumble it, and set aside. Leave the bacon drippings in the skillet.

Sauté the Vegetables
In the same skillet with the bacon drippings, add the diced red onion and minced garlic. Sauté for 2-3 minutes until the onion is translucent. Add the cherry tomatoes, spinach, and roasted red peppers, cooking until the spinach is wilted.

Combine Ingredients
In the skillet with the sautéed vegetables, add the cooked penne pasta and marinara sauce. Toss to combine and heat through.

Add Chicken and Toppings
Stir in the sliced grilled chicken and crumbled bacon. Cook for an additional 2-3 minutes until everything is heated evenly.
