In a large bowl, whisk together the all-purpose flour, cornmeal, baking powder, sugar, and salt until well combined.

Mix Wet Ingredients

In another bowl, mix the milk, eggs, and melted butter until smooth, then add to the dry ingredients. Stir until just combined, being careful not to overmix.

Cook the Waffles

Preheat your waffle iron according to manufacturer's instructions. Pour enough batter into the hot waffle iron to cover the surface. Close the lid and cook until golden brown, typically 5-7 minutes. Repeat with remaining batter.

In a skillet over medium heat, crumble and cook the sausage until browned and cooked through, about 5-7 minutes.

Sprinkle the flour over the cooked sausage and stir to combine, cooking for another 2 minutes to form a roux.

Gradually whisk in the milk, ensuring there are no lumps. Continue cooking until the gravy thickens, about 5 minutes. Season with black pepper and salt to taste.

Wash and dice the potatoes into small cubes. You can leave the skin on for extra texture.
