Preparation of Meat Mixture

    Mix the Meats

    In a large mixing bowl, combine the ground turkey and pork fat. Make sure to break apart any clumps of meat.

    Add Seasonings

    Sprinkle the salt, black pepper, garlic powder, onion powder, dried sage, dried thyme, red pepper flakes, brown sugar, and chopped parsley over the meat mixture. Mix thoroughly with your hands or a spatula until all ingredients are well incorporated.

Stuffing Casings (if using)

    Prepare the Casings

    If using natural hog casings, rinse them under cold water and soak them in water for about 30 minutes.

    Stuff the Mixture

    Using a sausage stuffer, fill the casings with the meat mixture. Be careful not to overstuff to avoid bursting during cooking. Twist sausages into links of desired length.

Cooking the Sausages

    Prepare the Grill or Pan

    Preheat your grill or stovetop pan over medium heat. If using a grill, lightly oil the grates to prevent sticking.
