Preparation

    Prepare the Vegetables

    Wash and chop the potato, mushrooms, red onion, red pepper, green pepper, and asparagus into small pieces. Rinse the spinach and set aside.

    Pre-cook the Potato

    In a pot, add enough water to cover the potato cubes. Bring to a boil and cook for about 5-7 minutes until slightly tender. Drain and set aside.

Cooking

    Sauté the Vegetables

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the red onion, red pepper, green pepper, mushrooms, and asparagus. Sauté for about 5 minutes, or until the vegetables are tender.

    Add Potatoes and Spinach

    Add the pre-cooked potatoes and spinach to the skillet. Stir and cook for another 3-4 minutes until the spinach wilts.

    Cook the Egg Whites

    In a separate bowl, whisk the egg whites until frothy. Pour the egg whites over the vegetable mixture in the skillet. Cook until the egg whites are set, about 3-5 minutes.

    Add Cheese

    Sprinkle the shredded cheddar cheese over the top of the skillet. Cover the skillet and let it cook for another 2-3 minutes until the cheese melts.

Serving

    Plate and Garnish

    Serve the Sunrise Garden Skillet warm, alongside a cup of fresh fruit.
