In a medium saucepan, combine the long-grain white rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 18 minutes, or until the rice is tender and the water is absorbed.

Mix Ingredients
In a bowl, combine the corn kernels, diced red onion, diced red bell pepper, chopped cilantro, lime juice, and salt. Stir well to combine.

Adjust Seasoning
Taste the salsa and adjust seasoning with more salt or lime juice as needed.
Guacamole

Combine Ingredients
In a bowl, mix together the diced tomatoes, diced red onion, diced jalapeno, chopped cilantro, lime juice, and salt.

Taste and adjust seasoning with additional salt or lime juice as desired.

Prepare Bowl
In a large serving bowl, layer the cilantro rice as the base.

Top the rice with corn salsa, guacamole, pico de gallo, sliced green bell pepper, black beans, shredded Cooper sharp American cheese, sour cream, and your choice of protein.
