Pretzel Dough

Nacho Cheese Dipping Sauce

Method

Pretzel Dough Preparation

  1. 1

    Activate the Yeast

In a large mixing bowl, combine warm water and sugar. Sprinkle the active dry yeast over the top and let it sit for about 5-10 minutes until it becomes frothy.

  2. 2

    Prepare the Dough

Once the yeast is activated, add the salt and gradually mix in the all-purpose flour, one cup at a time, until a shaggy dough forms.

  3. 3

    Knead the Dough

Transfer the dough to a floured surface and knead for about 8-10 minutes, until the dough is smooth and elastic. Place it in a greased bowl, cover with a clean towel, and let it rise in a warm place for 1 hour or until doubled in size.

  4. 4

    Form the Pretzel Sticks

After rising, punch down the dough and divide it into 8 equal pieces. Roll each piece into a long rope (about 12-14 inches long) and shape into a pretzel or stick.

  5. 5

    Prepare the Baking Soda Bath

Preheat your oven to 425°F (220°C) and bring a large pot of water to a boil. Add the baking soda to the boiling water.

  6. 6

    Boil the Pretzels

Boil each pretzel stick in the baking soda water for about 30 seconds, then remove with a slotted spoon and place on a baking sheet lined with parchment paper.

  7. 7

    Egg Wash and Bake

Beat the egg and brush it over the pretzel sticks. Sprinkle coarse sea salt on top. Bake in the preheated oven for 12-15 minutes or until golden brown.

Nacho Cheese Dipping Sauce Preparation

  1. 8

    Make the Roux

In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the all-purpose flour and cook for about 2 minutes until slightly golden.

  2. 9

    Add Milk

Slowly whisk in the milk, stirring continuously until the mixture is smooth and begins to thicken (about 3-5 minutes).

  3. 10

    Add Cheese and Seasoning

Reduce heat to low and add the shredded cheddar cheese, salt, black pepper, and paprika. Stir until the cheese is fully melted and the sauce is smooth.

  4. 11

    Serve the Cheese Sauce

Serve warm alongside the pretzel sticks as a dipping sauce.
