Add Ingredients
Stir in the smoked brisket, canned diced tomatoes, kidney beans, chili powder, cumin, salt, and black pepper. Bring to a simmer and cook for 20-30 minutes.

Cook the Omelet
In a non-stick skillet, melt butter over medium heat. Pour in the egg mixture and cook until the edges start to set.

Add Filling
Once the omelet is mostly set, add a generous portion of the smoked brisket chili and sprinkle with cheddar cheese. Fold the omelet in half and continue cooking until the cheese melts.

Top the omelet with a dollop of sour cream, chopped green onions, and crispy tortilla strips.
