Smoked Brisket Chili

    Prepare the Chili

    In a medium pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent.

    Add Ingredients

    Stir in the smoked brisket, canned diced tomatoes, kidney beans, chili powder, cumin, salt, and black pepper. Bring to a simmer and cook for 20-30 minutes.

Omelet

    Beat the Eggs

    In a bowl, whisk together eggs and milk until fully combined.

    Cook the Omelet

    In a non-stick skillet, melt butter over medium heat. Pour in the egg mixture and cook until the edges start to set.

    Once the omelet is mostly set, add a generous portion of the smoked brisket chili and sprinkle with cheddar cheese. Fold the omelet in half and continue cooking until the cheese melts.
