Method

Preparation

  1. 1

    Prepare the Casings

Rinse the pork casings under cold water and soak them in warm water for about 30 minutes. This will help to soften them and make them easier to work with.

  2. 2

    Mix the Meat

In a large mixing bowl, combine the ground pork and ground beef. Ensure they are well combined.

  3. 3

    Add Spices

To the meat mixture, add salt, black pepper, paprika, garlic powder, fennel seeds, crushed red pepper flakes, and sugar. Mix thoroughly until the spices are evenly distributed.

  4. 4

    Incorporate Ice Water

Add the ice water to the meat mixture gradually while mixing. This will keep the sausage mixture moist and help in binding the ingredients together.

Stuffing

  1. 5

    Prepare the Stuffing Tool

Attach a sausage stuffing attachment to your meat grinder or use a manual sausage stuffer. Make sure it’s clean and ready to use.

  2. 6

    Stuff the Casings

Carefully slide the soaked casing onto the stuffing tube, leaving a few inches hanging off the end. Tie a knot at the end of the casing. Fill the casing with the meat mixture, being careful not to overstuff it to avoid bursting. Twist the sausages into links of your desired size, tying off the ends with string or twisting the casing.

Cooking

  1. 7

    Cook the Sausages

Heat the cooking oil in a large skillet over medium heat. Once hot, add the sausage links and cook for about 10-12 minutes, turning occasionally until they are browned and cooked through.

  2. 8

    Serve

Remove the sausages from the skillet and let them rest for a few minutes. Serve hot with your favorite sides or in a bun.
